John Foltz is an associate professor in the Department of Agricultural Economics and Rural Sociology; his area of expertise is agribusiness management. Foltz teaches introductory agricultural economics and an upper-level agribusiness management class. His recent areas of research include the relationship between class attendance and student performance, the demand for consultants by Idaho dairy and potato farmers, and consumer perceptions of trout as a food item. He has done consulting work for numerous Pacific Northwest agribusiness firms and has served as an expert witness in a number of court cases. Foltz co-writes a monthly management column with Dr. Jay Akridge from Purdue University for the magazine Feed and Grain.
